Boosting lettuce�s carotenoids with UV light

In a study conducted by the U.S. Dept. of Agriculture�s Agricultural Research Service (ARS) researchers discovered that growing the right type of green leaf lettuce during winter in a greenhouse and exposing it to the right type of ultraviolet light may boost levels of nutritionally-beneficial carotenoids.
