Five golden rules for storing and displaying witloof chicory


In December last year a Belgian consumers� organisation investigated how witloof chicory (Belgian endive) was stored and displayed in stores. It was found that storage at too high a temperature and exposure to light quickly led to deterioration in quality (green leaf edges, red spots, core growth). How can (and should) it be done differently and more effectively?
